This work addresses a fundamental problem that is the rationalization of water use in cherry trees crop (“Prunus Avium L.”) in the mountain conditions in the north of Cáceres, for which it is proposed to study the response of two varieties with different dates of maturity, early 'Burlat' and medium 'Lapins', against different irrigation strategies. The treatments included a control in which the water needs of the trees were covered, two treatments with controlled deficit irrigation and a fourth treatment in which traditional irrigation was maintained. The latter had the highest water use efficiency and water productivity in both varieties; however, in the medium variety, there was a trend towards higher gross income with deficit irrigation (25% and 50% of water needs). The control treatment was the least efficient and the one that generated less gross income, with higher expenses (water and pruning). It was identified that the water potential of the tree stem at midday (Ψ stem) above a value of -0.7 MPa in preharvest, managed to obtain larger commercial sizes and improved fruit firmness. In postharvest, when the water supply is scarce in the area, sumit to the trees to water stress so that the Ψ stem does not reach values below -1.6 MPa, allows control of vigour, facilitating management, mainly pruning and harvesting, increasing yields and therefore the gross income of farmers.
