Resumen: El estudio de la industria medieval ha concentrado el interés hasta la actualidad en el análisis de oficios desde el punto de vista organizativo y social. Las fuentes científicas y técnicas de la Edad Media han permitido conocer gran parte de los procesos productivos, sin llegar a comprender si lo descrito es un verdadero saber del oficio o si es simple literatura sin valor industrial. Tomando como ejemplo una receta de curtido relativa al oficio de pellejeros, se ha reproducido el proceso técnico descrito utilizando la metodología de la Arqueología experimental.
The study of medieval industry has focused its interest until now on the analysis of trades from an organizational and social perspective. Scientific and technical medieval sources have allowed to know much of the production processes, but without understanding if descriptions give a true knowledge of the trade or is simply literature without industrial value. Taking as an example a recipe for tanning related with tannery trade, we reproduce the technical process using the methodology of experimental archeology.
