The stability of the glyoxal derivative has been studied and it was found to be stable for three hours at room temperature and unprotected from light, which allows the use of an automatic sampler in the chromatographic equipment. The method has been applied to Spanish wines and beers, and the level of glyoxal was found to range from 4.3 to 9.5 mg/L in wine, and 6.5 mg/L in the beer samples analysed. These results are in accordance with the literature, which describes higher concentrations of glyoxal in wine than in beer. It is also important to note that these concentrations are low and do not pose any health risk with responsible consumption of these beverages. |
