Abstract: Se ha estudiado la estabilidad del derivado de glioxal y se encontró que éste era estable durante tres horas a temperatura ambiente y sin estar protegido de la luz, lo cual posibilita el empleo de un muestreador automático en el equipo cromatográfico. El método ha sido aplicado a vinos y cervezas españoles, encontrándose que el nivel de glioxal oscila entre 4,3 y 9,5 mg/L en vino, y es de 6,5 mg/L en las muestras de cerveza analizadas. Estos resultados son acordes a la bibliografía, en la que se describen mayores concentraciones de glioxal en vino que en cerveza. Asimismo, es importante destacar que dichas concentraciones son bajas y que no suponen riesgo alguno para la salud con un consumo responsable de estas bebidas.
The stability of the glyoxal derivative has been studied and it was found to be stable for three hours at room temperature and unprotected from light, which allows the use of an automatic sampler in the chromatographic equipment. The method has been applied to Spanish wines and beers, and the level of glyoxal was found to range from 4.3 to 9.5 mg/L in wine, and 6.5 mg/L in the beer samples analysed. These results are in accordance with the literature, which describes higher concentrations of glyoxal in wine than in beer. It is also important to note that these concentrations are low and do not pose any health risk with responsible consumption of these beverages.
