Abstract

El pan negro es un signo y un símbolo de un tiempo y de un país: la España de la posguerra.

Comer ese pan marcaba más que cualquier otro signo (ropas, casas …) la pertenencia a un grupo histórico, el de los perdedores de la guerra y a un grupo social, el de los pobres, y por eso también se llamó "pan de pobres".

El lector no tiene en sus manos un libro de recetas sino más bien se trata de un contrarrecetario. Recetas que nunca fueron base para la carta de un restaurante, que nunca cruzaron el umbral para aparecer en una revista o en un programa de televisión, pero que reunidas aquí, directamente desde la oralidad, son evidencia de que ganaron la batalla.

Estudiar el hambre y, sobre todo cómo los que pasan hambre la combaten, ha sido centro de la investigación y reflexión, en esta emotiva obra de divulgación.

Eating this bread marked more than any other sign (clothes, houses...) the belonging to a historical group, that of the losers of the war, and to a social group, that of the poor, and that is why it was also called "poor people's bread".

The reader does not hold in his hands a recipe book, but rather a counter-recipe book. Recipes that were never the basis for a restaurant menu, that never crossed the threshold to appear in a magazine or on a television programme, but which, gathered here, directly from the oral tradition, are evidence that they won the battle.

Studying hunger and, above all, how those who go hungry fight it, has been the focus of research and reflection in this moving work of popularisation.
